. 2 medium size potatoes
1) Mix salt, pepper and thyme (chopped).
2) Rub the mixture of salt, pepper and thyme under the skin of the chicken.

4) Cut potatoes into halve.
5) Season potatoes with olive oil, salt and pepper.
6) Pre-heat oven to 180 C and roast for 1 hour or until cooked.
