Chicken Hainanese Rice
I tried cooking Chicken Hainanese Rice recently after my sister gave me the recipe. She has been telling me how good her chicken rice was so I thought I gave it a try and it turned out to be real delicious. My other half loves it especially the chilli sauce that goes with the rice.

Engagement

Lasagne
I have been wanting to try making a lasagne for a few weeks now and finally managed to bake it last evening. It was not difficult to make as long as all the ingredients are available and baking time took only about 40 minutes at 180 C. There are some extra ingredient I added in like parsley, thyme and carrot to enhance the flavour of the meat sauce from the original recipe.

250 g packet instant lasagne sheets
1/2 cup freshly grated mozzarella cheese
1/2 cup freshly grated cheddar cheese
1/2 cup thickened or pouring cream
1/2 cup fresh grated parmesan cheese
Cream Sauce
60 g butter
3 tbsp plain flour
2 cups milk
1 cup freshly grated cheddar cheese
Meat Sauce
1 tbsp olive oil
1 onion finely chopped
1 carrot finely chopped
3 cloves garlic, crushed
500 g beef mince
2 x 425 g cans tomatoes
1/2 tsp ground oregano
1/2 tsp ground basil
1/2 tsp ground thyme
2 tbsp fresh parsley
salt & pepper, to taste
1) Preheat oven to 180 C
2) Brush oblong dish with melted better or olive oil. Line with lasagne sheets, fill any gaps. Set
aside.
3) To make cheese sauce (melt butter in a pan. Add flour and stir for 1 minutes. Remove from
heat. Gradually add milk, stirring until mixture is smooth. Return to heat. Cook, stirring
constantly over medium heat until sauce boils and thickens. Reduce heat, simmer for 3
minutes. Remove from heat, add cheddar cheese, salt and pepper, stir until well combined.
Set aside.
4) Heat oil in a large pan. Add onion, garlic, carrot and stir over low heat until onion is tender.
Add mince beef. Brown well, stir in tomatoes, oregano, basil, thyme, salt and pepper. Bring
to boil. Reduce heat, simmer 30 minutes.
5) Spoon one-third of meat sauce over lasagne sheets. Top with one-third cheese sauce.
Arrange layer of lasagne sheets over top.
6) Continue layering, finishing with lasagne sheet. Sprinkle with mozzarella and cheddar
cheese.
7) Pour cream over the top. Sprinkle with parmesan.
8) Bake for 34-40 minutes until bubbling and golden.

Pizza
I used the Lebanese bread as the base since I didn't make the dough for this pizza. The toppings are tomato, mozzarella, anchovies and olives.

Potato Salad
Tonight I am going to grill a steak, steam some cauliflower and serve with potato salad. I used 4 small size potatoes to serve 2. The potatoes were boiled for approximately 15 minutes. Then kept in the fridge until ready to serve.
. Salt and black pepper
. 1 small yellow/white onion
. 5 to 6 tbsp of mayonnaise
. dash of paparika on top for garnishing (optional)

Tuna Corn Sandwich
A delight to have for lunch. Light and easy meal.
. 425 g tuna flakes
. 400 g corn
. 1 tsp of lemon juice
. 1 small onion

Steamed swordfish, Pak Choy & Fried Eggs
Our dinner last night. Steamed swordfish, pak choy and fried egg with rice. Simple dishes. The steamed swordfish has a very nice texture and was quite delicious. I seasoned the swordfish with 1 tbsp Shao Hsing wine, 1 tbsp soy sauce, dash of salt and white pepper and 1 tsp of sesame oil. I garnished on top with shredded ginger and red chilli (seeded) and steamed for 12 minutes.

Fried rice with bacon & cabbage
Since there is leftover bacon and cabbage in the fridge, I used it as part of the ingredients for making fried rice.
. 1 cup of cooked rice
. 1 strip of bacon, chopped
. cabbage
. 3 cloves of garlic, chopped
. 2 eggs
. 1 tsp of dark sauce (optional)
. 1 tbsp soy sauce
. a dash of salt
. a dash of white pepper
. 1 tsp of sesame oil
. 1 red chilli, seeded
1) Heat oil in a wok, then add bacon and fry until brown/crispy
2) Add in cabbage, stir and then add garlic
3) Put rice in the wok and stir evenly
4) Make a well in the centre of the wok, add the eggs
5) Stir all and add in soy sauce, salt, dark sauce,white pepper, sesame oil & red chilli

Grilled salmon with sweet mustard sauce & green beans
Our dinner last night. Just sprinkle the salmon with garlic powder, salt & black pepper and pan grill on the pan for about 5 minutes on each side and serve hot.
